“New Cascadia Traditional bakes some of Portland's best gluten-free pastries and bread—their donuts, bagels, and pizza dough are genuinely exceptional—but the experience can feel weirdly unwelcoming, with rigid service policies and slow pacing that seems to work against customer comfort. If you're willing to overlook the logistics and just want incredible baked goods, it's absolutely worth the trip; just don't expect the hospitality to match the quality of what's in the case.”
