Crema's Take

This espresso-focused Gainesville spot excels at crafting specialty drinks like matcha lattes and smooth cold brews, earning consistent praise for quality coffee despite recent staffing struggles that have slowed service. While the laptop-friendly atmosphere and baristas like Ray create genuine warmth and connection, the shop seems caught in transition—loyal regulars lament management changes and inconsistent availability that have tarnished what was once a beloved study destination. On your best days, you'll find the kind of barista who lifts your mood before you've finished your first sip; on others, expect patience with longer waits.

i used to love studying here but it has come to my attention that the store is under new operation management and it has definitely gone downhill. they are constantly out of things like matcha and vanilla which seems like a standard thing to have :( all of the seasoned baristas have left which sucks although i’ve been seeing ray a lot more and he has been awesome as well as carmen and kay! hoping for the best, they definitely need more than one person working though i hate seeing my baristas struggle

The coffee and food are pretty good. I'm a reasonable person, but it should not take 20 plus minutes to get your drinks. I feel like they are severely short staff. This past week they only had one person working, I felt bad for the employee. The management needs to hire additional employees

My wife and I stopped in for a coffee and a matcha around 1:30 pm on Wednesday at the Butler Plaza location. We were cordially greeted with a smile by Carmen, who as it turns out, was the only staff member on duty, and was busy working all by herself on at least four inhouse and online orders! She cheerfully said she would be right with us to take our order. After a few minutes, she paused her work and came over to the counter to take our order for a coffee and a cold matcha. However Carmen apologized and said they have been out of matcha, vanilla and cold brew as they were waiting for a supply delivery for days, but maybe by Friday. So we canceled the matcha and only ordered the coffee. Carmen was great and doing the best she could, but how could management only schedule one staff member to be on duty? And why were basic items like matcha, vanilla and cold brew out of stock for days? This is a nice, clean shop with great coffee and, usually, good matcha too. But the staffing issue, and the product stocking issue should never happen, and needs to be corrected. The only saving grace for this visit was the friendly and cheerful service from Carmen, despite her being overwhelmed with running the shop by herself. Carmen needs to recognized by her management for being a great ambassador of the Foxtail brand, along with a substantial raise for her work ethic!

Shoutout to Ray at Foxtail Coffee!! You know when you walk into a place half-asleep and somehow leave in a better mood than when you arrived? That’s Ray. From the second you walk in he treats you like a friend. He greets everyone like they matter, remembers names, remembers orders, and somehow keeps the line moving at lightning speed without ever making you feel rushed. He always sets the tone for the perfect day. And the drinks? Flawless. Every. Single. Time. What really sets him apart, though, is his energy. Ray brings such a positive and welcoming vibe that turns a quick coffee run into the best part of your day. If you are ever in the area and want to pop in for a quick drink, hope that Ray will be there behind the bar!

I have been a regular customer for a long time and genuinely enjoy the coffee. Most of the baristas have always been friendly and professional, which is why this is so frustrating. Recently, however, reliability has completely fallen apart. On multiple occasions, the bar has been closed roughly 20 minutes before the posted closing time (by the newly hired barista, she often does that). This makes it impossible to order even though the store is technically still open. On top of that, the location now closes at 6 pm, which already severely limits accessibility for working professionals like me. I used to come here after work to decompress. That was part of my routine. That is no longer possible. Let me be clear: I do not mind higher prices. I do not mind tight seating. I do not mind waiting. What I do mind is walking into a business during advertised hours and being turned away because someone decided to shut things down early. That is not a “small inconvenience”. That is a failure of basic operations and accountability. If your posted hours cannot be honored, they should be changed. If employees are closing early without authorization, that needs to be addressed immediately. Either way, this reflects directly and very poorly on the management. Consistency and reliability are the bare minimum expectations for any service business, especially one that charges premium prices and operates at a place like Butler Plaza. Unfortunately, this has cost you a loyal customer. I will be switching to a different coffee shop and advising all my students, friends, everyone in my network to do the same. You have officially lost a regular.
