Crema's Take

Tucked into Capitol Hill, this Paris-inspired boulangerie wins hearts with genuinely exceptional pastries—croissants, pain au chocolat, and éclairs that taste like they've been transported straight from a Parisian neighborhood bakery—paired with a staff that radiates warmth and genuine care. It's the kind of place where you linger over coffee and a flaky pastry, where the manager remembers your name, and where the French charm feels authentic rather than affected, making it perfect for everything from solo coffee moments to unhurried meetings with friends.

A fantastic addition to the Capitol Hill neighborhood! The pastries are incredible and the employees are super friendly and kind. We’ve tried the croissant, pain au chocolat, quiche and eclair. Every single thing was absolutely delicious! We will definitely be back.

Super yummy pastries but embarrassingly tacky AI art on the walls! It’s so easy to not have corny AI slop in ur cute bakery!!!! You are literally in eastern market where I’m sure many local artists would love to have their art featured !

Come for the food, stay for the kindness. We accidentally walked into this boulangerie on a Monday, when the bakery was closed and the staff was holding a business meeting. Walid, the manager, warmly invited us in and offered my child a lollipop. Walid has continued to remember us—and he couldn’t be more hospitable, down to inviting us back to help celebrate a family birthday. Saint Georges aims to be a real neighborhood bakery, with authentic French techniques and the warmth that builds community. And we are delighted to welcome the people who moved here from France to open the boulangerie doors! Edit to add: I saw the reviews about wait times and food running out. I’m sympathetic to everyone. The neighborhood demand has been insane—especially on weekends—the baker gets started at 2 am! Because croissants and baguettes are foods that must be made with fermentation (think about bread rising), it seems that there must be a physical limit to how many croissants one kitchen can produce in a day.
