Crema's Take

Roots Gastrohub is a quirky hybrid spot that seamlessly blends a working bike shop with a full-service café and restaurant, creating an unexpectedly cool gathering place with both indoor and outdoor rustic seating. Their breakfast burritos (especially loaded with green chilis and creative proteins like bison) and thoughtfully crafted espresso drinks genuinely compete with specialty coffee standards, all served by a genuinely chill staff who keep the energy friendly even when things get busy. Whether you're grabbing a quick bite before a flight, settling in for a slow morning, or meeting friends, the genuine care in their food and the laid-back, unpretentious vibe keeps people coming back.

Breakfast burrito time 🌯🔥 Tried Roots Gastrohub this morning and went with the bison burrito + Rowdy Red salsa… and of course added green chilis 🌶️😎. Also threw in mushrooms because I love me some shrooms 🍄. They are straight-up skilled at breakfast burritos. The eggs were cooked absolutely perfect — just a little bit of that runny yolk magic 🤤 (and yes, I’ll always choose runny yolk). Also grabbed Tyler a bacon burrito… which of course I had to “quality control” sample 😂🥓. It was tasty too. Can’t go wrong either way. Just my opinion — no feelings harmed in this burrito review. Everybody have a great day! ☀️🙌

Waiting for a flight out of Grand Junction, we searched for a lunch spot. Very unique spot- half bike shop/half restaurant. Inside and outside rustic seating. Wonderful food! We got 2 different burgers and both were tasty and unique! Great sides too. They are big enough to share!

Awesome Food. Best Breaky Burrito around by far. Staff is amazing and chill so to be friendly too is to be. They get busy and one can skip the line and be honest and ornery and order online with love notes to the kitchen staff about how you want your bacon extra crispy.

The sandwich was very good.I had a macchiato that beats Starbucks. I love the outdoor dining. The weather was perfect for it. Will definitely be returning.

We were recommended Roots by friends and had high hopes. We were BLOWN AWAY by the food, service, cleanliness, and atmosphere. Our expectations were FAR exceeded and cannot wait to go back. We both got the breakfast burritos that are made fresh to order all the way down to the perfectly cooked eggs. You pick your own fillings making the burrito cooked to personal perfection. The orange juice was fresh and coffee was dark and strong. The tortillas were hand made. Overall the best experience I’ve had dining out. We love supporting small businesses!
