At The Coffee Ethic, we arrived with purpose, having come specifically because it stands as one of the markers along the Springfield Coffee Trail—a designation that invites both expectation and charity in equal measure. We ordered two traditional cappuccinos, made with 2% milk, having unfortunately neglected to ask for whole. This omission mattered. A cappuccino depends upon a certain fullness, and without it the coffee, though good, did not quite achieve greatness. It was competently brewed and conscientiously served, but it reasoned where it might have convinced. The bakery items were fresh and agreeable, plainly made and properly handled. The chocolate—Askinosie, the Springfield staple found in nearly every serious café and even celebrated in its own dedicated shop—was predictably good: rich, familiar, and locally beloved for good reason. Its presence felt less like a choice than a civic obligation, one fulfilled without complaint. The Coffee Ethic remains a place of sound intentions and careful practice. It may not overwhelm, but it earns its place on the trail by consistency, thoughtfulness, and a quiet fidelity to craft.
I loved this coffee shop. The breakfast sandwich was seriously good and tasted fresh, not rushed or generic. The banana coffee drink was amazing and honestly one of the best specialty drinks I’ve had in a while. The atmosphere was comfortable and welcoming, and the staff clearly cares about what they’re serving. I’ll definitely be coming back and recommending this place to others.
This downtown coffee shop is a real gem! It offers a fantastic selection of coffee and tea, and the atmosphere is incredibly pleasant. Everyone there was incredibly friendly and welcoming.
This is going to be my go-to coffee shop when I am in Springfield. I ordered the Ethiopian pour over which was really good and the Citrus & Fig Aerocano from the fall menu which was one of the best specialty drinks I've had in a long time. It was super velvety and such a great pairing of flavors! There is plenty of space and the baristas are kind and knowledgeable. I didn't try any of the food but it all looks great!
Traveling through springfield, we found this gem of a coffee/breakfast place. The shop has a modern vibe, the staff were informative and friendly, and the food/coffee was wonderful! We got the avocado toast (perfection), seasonal salad (so good), cortado and the banana foster latte (amazing)! We got the banana chocolate chip espresso muffin, a strawberry banana smoothie w/plant protein and an americano to go. Everything was delicious! Worth the stop, even if you are just driving through on I44!
