Paul Schat's Bakery
1212 S Stewart St, Carson City, NV
Crema's Take
“This beloved Carson City institution fills the air with the irresistible aroma of fresh-baked goods and generations of Dutch bakery expertise, drawing regulars back multiple times a week for both the exceptional pastries and honest, reasonably-priced lunch offerings. The Schat family's 130-year legacy shines through in every loaf and croissant, paired with genuinely warm service that makes you feel like a welcomed guest rather than just another customer. It's the kind of place where you can grab a quick coffee and pastry or linger over lunch and conversation, all while surrounded by the comfort of authenticity that chain cafes simply can't replicate.”

This place has so quickly become my favorite lunch/coffee spot. I discovered it a month and a half ago, and have been there once/twice a week since. Their food is delicious and not outrageously priced. The bread loaves are beautiful. And gosh, the pastries and cakes are incredible. Not only that, the staff??? So friendly and attentive. Just finished ordering my husband’s birthday cake from here because I just couldn’t help myself. So happy to have found Schats.
Don't get me wrong here. I do love this place. Recently, I ordered a cup of soup and it came with a baguette. I asked for butter and they wanted to charge a dollar extra. Not that much I know but if you're going to send a sourdough roll, at least provide butter! You can do/ be better Paul Schat's🫤
I can't say enough good things about Paul Schats bakery! From the moment you walk in, you're greeted with the most incredible aroma of fresh-baked goods and the warmest, most welcoming staff. The service here is truly top-notch—everyone is friendly, helpful, and genuinely happy to see you. But the food... oh, the food! Everything I've tried has been exceptional. Their pastries are flaky and delicious, and the coffee is perfect every time. The real star of the show, however, is the bread. It is, without a doubt, the best bread I’ve had in a long time. The crust is perfectly crunchy, the interior is soft and airy, and you can tell it’s made with care and high-quality ingredients. I highly recommend taking a loaf (or two!) home with you. If you’re looking for fantastic food, incredible bread, and service that makes you feel like family, look no further than Paul Schats bakery. This is my new go-to spot!
The Schat's family opened their first bakery in Utrecht Holland in 1890. The experience is evident in all their baked products, no matter which location or family member runs it. While they offer sandwiches and coffee, the baked goods are what really sets Schat's a notch above the average. Their scones and treats are my favorite, but the bread is so superior to anything you can find in a grocery store.
I've been on the road over a month now visiting bakeries every morning. Paul's bakery is by far the nicest one I've been to in a long long time. Huge variety of breads, pastries and cookies. Very welcoming interior, fast and efficient help... And a really good cinnamon roll... He named San Francisco!!
