Hey Bagel is hands down my favorite bagel spot in the Seattle area. Their bagels are always perfect and piping hot, and the bialys are especially excellent. My favorite cream cheese is the scallion, with the lox spread coming in a close second. Everything tastes fresh and consistently well done every single time. They also have a great rewards system, which is a nice bonus for regulars. Definitely anticipate a line and plan to come early, as they do sell out for the day. The line moves efficiently, and it is absolutely worth the wait. There is plenty of parking available, which makes the experience even easier. This is more of a grab and go spot rather than a place to sit down and eat, but that honestly works in its favor. If you’re serious about good bagels, Hey Bagel is a must.
Best bagels I’ve ever had. Everything, garlic, pizza, sea salt… texture and pull. Soft and tender in the middle, you’ve gotta get one warm. Now the smears… phew 😮💨 I’ve only had two and they. Are. FIRE 🔥 Roasted garlic and chive & the chili crisp are ridiculous! Paired with drip from Anchorhead Coffee and I’m happy as can be 😊
Not a fan of long lines but had the time today and the line went surprisingly fast for 11:30am on a Sunday (15 min total wait). If you’re expecting a sliced, toasted, shmeared bagel, you will be let down - so lean into the rip and tear experience! The bagel was delicious, great flavor and texture, still warm in the bag and the white onion Gruyère bialy was exceptional - so soft and perfectly baked. The shmears are interesting and tasty, it’s fun to grab a bunch of different kinds to dip and enjoy. Friendly and efficient staff, worth the hype and a little wait.
This place lives up to the hype! My friends and I got to the store around 9:00 and there was a pretty long line. It took about 20/25 minutes to get to the front and order. After reading the reviews, I decided to get the Bialys (Carmelized Onion & Gruyere), garlic, plain, poppy, and sea salt. As for the spread, I got the spicy scallion, biscoff chocolate espresso bean, and raspberry curry & hot honey. The Bialys are a must get! They’re hot, fresh (you can literally see the bagels get taken out of the oven and placed in the display baskets), and absolutely delicious. The caramelized onion was savory and paired well with the melting gruyere cheese. I tried my friend’s Fresno Chili Pepper and Cheese and this was also just as delicious with a nice kick to it. As for the other bagels, they’re also tasty! I brought back some home for my parents to try and they enjoyed it after throwing it in the toaster. For spreads, the raspberry curry & honey was such a pleasant surprise! The combo threw me off a little bit in the beginning but it ended up becoming my favorite spread. The balance between sweet and savory with the curry flavor was fantastic. The biscoff chocolate espresso bean was good but I’m not sure if I tasted the biscoff- great coffe/espresso flavor though! Honestly, everything was delicious here. You really can’t go wrong with whatever you choose but the Bialy’s and the curry spread is a must get! Also, S/O to Allie! Despite the chaos, she brought such good energy and I really appreciate her for helping me out choosing the bagels/spreads.
To be honest, I was expecting more out of this bagel shop. I visited a New York 5th Avenue bagel shop just two weeks ago. Maybe The Liberty bagel set a very high standard for me. When I saw the long line, just as long as the one outside Liberty Bagel, I thought I could get the same experience: a well-cooked, split bagel with plain cream in the middle. I was wrong. They only picked up a bagel and gave me the cream separately in a small plastic cup. Maybe this is normal in Seattle? The taste wasn't that bad, and the bagel wasn't warm. And I would expect it to be toasted before serving. I paid a similar price for the Liberty bagel I had in New York with a very different, unfinished product. They are well-located, and the interior isn't bad actually, but there's no seating, so if you buy something, pick it up and leave. There are many seating options outside in the shopping center, so you can probably sit outside.
