Crema's Take
“Ayala Coffee in Union is a Filipino-inspired specialty café where the coffee and matcha are genuinely excellent, but what really draws people back is the warm, chill vibe and the kitchen's creative streak—think sisig flatbreads and tocino sandwiches alongside perfectly crafted espresso drinks. The owners Matt and Trixie have clearly built something special, with thoughtful details like the decorated walls celebrating Filipino culture and consistently fresh pastries that keep regulars coming in multiple times a week. It's the kind of place where you can sink in for hours with friends, grab a quick breakfast, or just enjoy a really good cup alongside people who clearly care about getting it right.”

I come here at least once a week with friends, we either get the smash burger which is amazing, or the sisig flatbread which is also amazing. The staff is friendly, patient, and the ambiance is chill and lively. For Valentine’s Day they had a special menu and I got the calamansi cake and the raspberry cake, both were amazing and made my partner very happy (they are Filipino). My only complaint is that they don’t have a rewards program for frequent customers because I would definitely sign up 🫡
I loved this cafe! The service was quick and friendly. The atmosphere was wonderful and very aesthetic. I really love the wall with all of the different Filipino decor. We got the tocino breakfast sandwich, the onion bistek burger, and the sisig flatbread. For drinks, I got the cardamom and fig latte and my boyfriend got the ube latte. We LOVED the sandwiches especially for the portions and our drinks (my bf finished most of his drink before the food even came out). For the sisig flatbread, we thought the egg yolk overpowered the dish a little bit, but we still thought it was delicious. Overall, we will definitely come back again to try the other options :)
I absolutely love Ayala Coffee! The coffee and matcha are of high quality, the pastries are always fresh, and the food is phonemail! I have my go-to order - an egg & cheese with a strawberry matcha - but every time I branch out and try something new, I end up finding another favorite. The consistency never misses. The staff are very personable and make a genuine effort to remember my name and even my usual order, which makes every visit feel welcoming! Thank you to Trixie and the entire team for the amazing hospitality, coffee and food!
Coming from the old location, everything is still top quality! The pandan Katie is just as full of flavor when it was in a smaller setting. I’m glad Matt and Trixie stayed true to there vision. The addition of food and pastries is welcome addition. The pastry chefs are top tier, such good stuff coming from the back of the house. I believe you will enjoy everything, and find yourself coming back to try the other options on the menu. Thanks!
Came on an early monday and the place was already busy. We found a spot for two but by 10:30am almost all the seats were taken. We got their spamganisa and tocino sandwich, pastries and of course their lattes. Surprisingly, I enjoyed the tocino more than the spam as the latter didnt really taste exactly like spam as it was flavored differently. Lacked the salty and savory taste i was used too lol The tocino though was sweet and had that savory taste which i liked. The pastries were good and i actually loved the ube champorado croissant. for the lattes, i tried their apple pie. I shouldve thought about how im not really info fruity lattes so this was a no-go for me - shouldve just gotten their signatures but i tend to try something new so there’s that. Would still love to come back though! My first ube, pandan and cassave lattes (from their old location) was sooo good and memorable! Gonna have to pay attention to how to make it one of these day and copy them at home lol
