Pastries are awesome. Great job with that. Personally, I would prefer a little more of a plant vibe. Also, in my opinion, the coffee needs to be elevated significantly. I would recommend buying a legit espresso machine, such as a La Marzocco Linea and grinder upgrade with homemade simple syrups and custom lattes. Invest in barista training through specialty coffee association of American for example. Also order beans from a great specialty roastery, such as Onyx Coffee in Arkansas. Or perhaps a North Dakota Roaster Such as Youngblood in Fargo or thunder coffee in Fargo. They are probably the best two roasters in the state. I would also offer a simple pour over program, Such as even buying a Marco system, or even purchasing some nice kettles from Fellow and maybe using a V60. In any case, if you ramp up your coffee situation there, it will make this place significantly better and stand out in Bismarck as a go to option for pastries and coffee

I can confidently say that it is love at first sip of coffee, at the first breath of this divine freshly baked bread, croissants and puffs! This is my favorite cafe in all of North Dakota. I adore your serving of coffee in these snow-white cups!!! And your croissants are a divine delight! For this reason, I am ready to drive 2 hours from Jamestown to immerse myself in this atmosphere of delight!!! You are the best! Thank you so much for your work!!!

Stopped on for a coffee and brunch snack. Very cute and cozy location, but also limited seating. The line was a little longer which made it hard to maneuver to the back seating area. The coffee was good as well as the croissant. I had some friends with who were at the end waiting for our order to be ready so it was odd when they called my name to the back for me to come up and get it. They had cool chalk drawings on the sidewalk right out by the front door which added a little interest as well.

We went on a trip out west recently and our first stop of the trip was Bismarck. While looking for a breakfast spot, I came across Brick Oven Bakery and it looked really good so we decided to come by. Came at around 11 AM on a Saturday and they were quite busy, there was a very long line at the register so we had to wait a bit. I got a breakfast croissant sandwich as my meal and we also got a cinnamon bun, breakfast danish, and a blueberry muffin to try. The croissant was really good! The bacon was cooked nice, the eggs were fresh, and all the pastries we tried were fantastic. The cinnamon roll was perfect, the breakfast danish was unreal, and the blueberry muffin was pretty good. Overall, I was super impressed! If you’re in Downtown Bismarck, Brick Oven Bakery is a winning breakfast spot and worth the wait! I’ll be back.
