Honore Patisserie and Espresso
8056 Lake City Way NE, Seattle, WA
Crema's Take
“Honore Patisserie and Espresso is a French bakery-focused café where Chef Honore's mastery of traditional techniques shines through in their two celebrated specialties: croissants and brioche that justify their limited three-day-a-week schedule. The espresso is solid and approachable, but here the real draw is the pastry case—think ham and gruyere croissants and delicate berry tarts that have locals lining up minutes after opening, paired with genuinely friendly baristas who keep service moving despite the crowds.”

The hours are incredibly inconsistent. I've tried to come at least 3 times when they are supposed to be open but werent. For a while they were only open Fri - Sun, however you wouldn't know that because they never had hours posted and they don't have any Internet presence to let you know if they are suddenly closed. You're just going to find out when you show up and either there's a note in the door, or they're just dark inside. That brings us to today, I showed up at 8am on a Sunday to see big signs in the windows showing expanded hours! Wednesday - Saturday now, yay! Closed on Sunday :(. We were there last Saturday and there was no sign or notice about upcoming changes. The food is delicious when they're open and I have become a regular but I am frustrated with their lack of communication around their changing hours.
Chef Honore, who I had the honor (ha) of listening to at the bakery this morning, has some serious mastery of French baking techniques. There are two main specialties here—croissants and brioche—and most of the items behind the display are based on one of these. They also have some cookies, tarts, and other goodies, but that's not really the point of coming here. The croissants, either sweet or savory, are exemplary. My personal favorite is the blueberry pinwheel, but anything that shows off those amazing flaky layers will be well worth it. They also have a breakfast sandwich served on a croissant and it's absolutely delicious with perfectly baked eggs and melty cheese that's just a little charred around the edges. The brioche also comes in many varieties. If you can get there early and get a chocolate brioche while it's still warm, do it. It'll change your life. My other big favorite is the lemon lavender scone! The trouble with Bakery Honore is that they sell out often and early. There was a line of half a dozen people before opening on a Friday morning. Their hours are limited and sometimes inconsistent, so just plan to be flexible but know that the effort is so worth it.
Have lived nearby and meant to go for years but due to Maps status, had assumed it was closed… It is NOT! It is open, vibrant, and delicious. Baristas are friendly, and service is quick. They have a brilliant and wide assortment of gorgeous French pastry (provided you come early, as we’ve heard they sell out!), the coffee is delicious, and the cafe ambience is lovely. Thanks so much to our new favorite local coffee shop and bakery!!
I'm generally a bit generous with 5-star reviews, but Bakery Honoré genuinely deserves it. It is a testament to the quality of their pastries that they are only open three days a week, for 7 hours a day. The pastries are immaculate, and the croissants are the best I've found in Seattle and possibly elsewhere (I say this as someone who's been to Arsicault, Craftsman & Wolves etc.). The coffee is also amazing and the matcha latte—one of my favorite drinks of all time—is the best I've had anywhere (and this drink can be VERY hit or miss depending on where you go). The atmosphere, decorations, music, and the friendliness of the staff are just as enjoyable as the food. You just have to see for yourself. (= They have a few heated savory breakfast sandwiches and some seating if you wish to enjoy your food or drink on-site. For what it's worth, I walk two miles to come here every weekend... so they must be good!
Came here about minutes after opening on a Sunday and was third in line, and soon there was a dedicated line. Very much enjoyed the ham gruyere croissant and the berry tart. The bread pudding was good too, loved that it wasn't too sweet and had a lovely texture but personally could have done without the added chocolate chips. Good coffee, cute cozy interior and friendly staff too :)
