I cannot rave enough about my first experience at Hi Bye. The location in Westlake is fantastic. Plenty of parking. Spacious café with many tables to sit on both inside and outside. Everything feels very clean, new, chic, elegant. It's a space that just FEELS GOOD. I was lucky to walk in and be served by Max, the owner. He was so warm and welcoming. The menu is incredible. What stole my heart was that they have a special Zodiac Menu. I thought that was so creative and fun. I ordered a regular matcha latte and it was DELICIOUS. It's always a hit or a miss, but this one was a delicious hit. Max get ceremonial grade matcha imported from Japan and you can really taste the difference. And as if that wasn't enough, Cigarettes After Sex was on the playlist. It's honestly become my new favorite work spots. I only wish Hibye the greatest success and may they flourish and continue good-feeling space, drinks, and moments. It really felt like an oasis in the city.

As part of my very serious responsibilities as a food blogger(yes, it’s basically a public service), I visited Hibye Coffee in Westlake Village — and let’s just say… I’ve found my new pink-lit happy place. 💖 Located on Russell Ranch Road in the Target shopping center, this little lounge is giving cozy zodiac café meets “why don’t I work from here every day?” vibes. The pink lighting? Flattering. The zodiac-themed menu? Adorable. My Leo heart felt seen. But let’s talk about what really made this visit unforgettable: the customer service. Max, the owner, greeted us like we were long-lost friends instead of first-time customers. The kind of welcome where you instantly relax and think, “Okay yes, I’m staying awhile.” He was warm, genuine, and clearly loves what he’s building here. AND — because he is officially winning at life — he made a special Pup Cup for Murphy the Doodle. 🐾 Murphy has now decided we are moving in. That level of hospitality? You can’t fake it. It set the tone for everything. Now, onto the drinks — creative, delicious, and clearly made with intention. We ordered the Leo (Organic Vanilla + Sea Salt Caramel Latte) and it was smooth, balanced, and not overly sweet — basically the main character energy of lattes. Would 100% order again. They also offer all your classics — espressos, Americanos, cappuccinos — plus Vietnamese coffee and Spanish lattes for when you’re feeling bold. And the smoothies? Yes, they have a price tag. But once you see what’s going in them, it makes sense. We’re talking real-deal, high-quality ingredients — not mystery syrup. • Blue Hawaiian — pineapple, banana, spirulina coconut oil, coconut milk, vegan protein, vanilla syrup. It tastes like a beach vacation with a wellness plan. • Super Fruit — strawberries, bananas, blueberries, vitamin C powder. Basically a glow-up in a cup. Now let’s have a moment for the Truffle Me Avocado Toast because she deserves applause. 👏 Organic sourdough, organic avocado, Himalayan sea salt, lemon juice, olive oil, and truffle oil. It’s elevated. It’s luxurious. It’s “I make good choices” energy. We also had the Ham & Gruyère Croissant — flaky, savory, and gone way too quickly. Bottom line: Hibye Coffee doesn’t just serve drinks — they serve experience. The vibe is cute, the food is delicious, but the hospitality? That’s what makes it special. Exceptional service is rare, and they nailed it on day one. We’ll absolutely be back. And Murphy already has.

Hibye Coffee was an awesome experience from start to finish. Max welcomed us so warmly right when we walked in and took the time to ask if we had any dietary restrictions, which was really appreciated. He explained the menu clearly and made great recommendations. Everything we ordered was absolutely perfect, and you can tell a lot of care goes into what they serve. The shop itself was very clean, and even the bathrooms were spotless, always a big plus. Great service, great coffee, and a genuinely welcoming vibe. We’ll definitely be coming back.

The welcoming environment at this coffee house really stood out. I was looking for something other than a typical chain, and that’s actually why I decided to try it. Max took great care of us. He was helpful, thoughtful, and provided recommendations since it was our first visit. The Spanish Coffee was excellent, and the toast was just as good. If you are looking for a local spot with a warm environment, great service, and quality coffee, Hibye is an excellent option!
