Palio

Crema's Take
“Tucked inside the Bellagio with a lovely poolside patio, Palio pulls serious espresso lovers with carefully crafted Spanish lattes and buttery pastries that taste like they're made with genuine care. Just know that popularity comes with a price—expect a real wait, especially mornings, though hitting it mid-morning on a weekday or off-peak times rewards you with a more civilized experience and a chance to actually enjoy your coffee before it gets cold.”

Almost an hour waiting on a line to get a coffee and a croissant is insane Need more staff on duty By the time you get to order you are not hungry anymore and then have to wait for the food to be ready. The lady name Francisca try her best to be friendly and fast but there is no way the back service be so slow. The available table was not sanitized Make it better please
The quality of the coffee and food is genuinely good and clearly made with care, which is why it’s disappointing that the overall experience is affected by the service. Unfortunately, there is usually only ONE employee responsible for preparing all coffees and drinks, which leads to long waiting times and large queues. This creates frustration among customers and puts unnecessary pressure on the staff member. With better staffing and organization, this café could be an excellent place.
Stopped by Palio Café around 10am on a Tuesday and was pleasantly surprised—only three people ahead of me in line, which is rare for spots inside the Bellagio. I ordered the avocado toast, and while it would’ve been even better with an egg, it was still fresh and tasty. The atmosphere was calm and not nearly as crowded as other cafés nearby, which made for a relaxing start to the day. Would definitely return for a quick, peaceful bite!
Good tasting danish pastry and cake lemon ricotta slice. Spanish Latte was a bit too sweet for my liking. There can be a long queue line in the morning so be ready. Sometimes you’ll miss hearing your number being shouted, so be alert and keep on the look out. The veranda area over looking the Bellagio pools seems like the best spot to enjoy a cup of coffee.
Convenient coffee shop serving breakfast plates and to-go pastries and sandwiches. The outdoor patio overseeing the pool is quite nice. The line is as long as you can expect it (you’re at the Bellagio after all) so make sure you get there before 7am if you don’t want to wait for your coffee.
