Mix Bakeshop
57 N Main St, Ashland, OR
Crema's Take
“Mix Bakeshop is a beloved Ashland institution where the coffee is taken seriously—their cold brew hits different, and they offer both traditional espresso and pour-over options—but the real magic happens in the pastry case, with croissants so good people think about them for hundreds of miles afterward and a lemon meringue tart that keeps locals coming back. It's the kind of place that's perpetually bustling with a line out the door, perfect for lingering with a quality cup while nibbling exceptional sandwiches and baked goods that somehow bridge Italian espresso culture with Argentine bakery tradition.”

I had a croissant today some six-hundred miles from this store and all I could think about was how much better Mix made it. I think about their’s often—at least as often as I eat croissants; it’s perfect. Dense, but it melts in the mouth; airy, but just filling enough for breakfast. When I visited, there were days I’d take two or three trips here, and I barely even regret it from a financial standpoint. It’s been two months and I can still taste this pastry. If you are within an hour of this city, you would be doing yourself a disservice to not stop here. Knocked off half a star because it’s pretty warm in the restaurant. Added the half star back on because the chemistry behind the bar felt like watching a sitcom—probably the only thing at Mix you’d need a knife to cut. Coffee’s pretty good, too, but I wish they had a dark roast! If you’re a medium roast fan, you’ll love what they’ve got.
This is probably the best bakery that I found so far in the rogue valley. The lemon meringue tar is amazing. The coconut macaroons are pretty good when they're crispy, and their chocolate chip cookies are ok. I was a little unimpressed with the coffee but it was okay as well. We also made an order for a birthday occasion and they simply just forgot to make it so this place isn't very reliable. They did end up delivering though
Love the quality of the food coffee and desserts, best coffee shop in south Oregon, the sandwiches remember me a Italian coffe mix whit Argentinian (Buenos aires) bakery's coffee
Very busy place. There was a line out the door. Coffee, ice cream, bread, pastries and more. Delectable looking bakery goods. We ordered a lemon meringue tart and a ham and gruyere egg pie. She asked if I wanted it toasted and I did. When we got it was still on the cold side. We asked if we could get it heated up more and waited like 15 mns, finally trying to find someone and they had forgot it. I didn't care for it either (too much of a spice on it) but the lemon pastry was good. Seating outside and inside fills up quickly on the weekend
Monday... Stopped in after dinner for a coffee. Really good call. Brilliant cold brew made with Stumptown's "Bakeshop Blend", but the showstopper is the pastry case. Tonight we split a lemon meringue tart, and after that masterpiece there's zero chance we're not sampling the breakfast case with an espresso in the morning. Trust me, get in your steps and stop by for a well earned guilty pleasure. Tuesday morning update... As expected, the early coffee and fully restocked pastry case are just brilliant. Flaky and delicious chocolate and almond croissants 🥐, and the daily special banana bread lattes are likely the best I've ever tasted. Can we add more stars?♥️☕ Wednesday... Back again and still amazed. Put Mix high on your list when in Ashland.
