Crema's Take

Tucked in Union Market, this Italian-leaning spot crafts focaccia sandwiches that inspire real devotion, with creative flavor combinations like pistachio crème that elevate simple ingredients into something memorable. The bread itself is the star—crispy outside, pillowy within—and regulars swear by asking for it toasted to deepen those already impressive flavors. It's perfect for a quick but thoughtful lunch, especially if you arrive later in the day when their unique personality really shines.

Love union market! The focaccia was crispy, but not as thick as I expected, and it wasn’t hot. The components of the sandwich blended together perfectly, and the pistachio crème was an amazing touch. Will have to come back to try other flavors!

That 2 star review sounds like he needs a hug. The sandwiches are absolutely worth the try. all have such a unique and fresh taste. I reccomend asking my for it to be toasted, it enhanced the flavor sooooo much. the employees are also suuper nice and that girl who wore the head scarf was so cute. need that. but i will definitely be coming back here!

I've tried this location 3 times now, hoping that it's actually good, and I've been thoroughly unimpressed by every single sandwich. First of all, let's address the focaccia as it calls itself a "Focacceria". I've tried it cold and hot and it always seems unremarkable. On the cold sandwiches, it tastes like they take it out of the fridge and put cold ingredients on top. The texture, not chewy, it doesn't feel like high quality bread. They don't add anything to the focaccia, no herbs, no sea salt, so you're just eating very underwhelming slightly alternatively texture bread, with minimal chew, it hardly stands out. I'd rather eat a baguette, sourdough, even a martin's potato roll sticks out more than this unremarkable focaccia. I mean at the bare minimum some flaky sea salt on top of this focaccia, it reminds me of cheap grocery store bought focaccia, that looks better than it ever tastes. I thought focaccia was supposed to be indulgent, and textured, because it has so much olive oil and proofing. It's supposed to be light and airy, I never get light an airy, and because the bread is served cold on their cold sandwiches, it doesn't have a pleasant texture. On hot sandwiches it's pressed thin and becomes completely unrecognizable. The sandwiches themselves, are fine, at least the cold ones are. I've had the Mortazza and the Circolo. The ingredients themselves on the bread seem to be higher quality than the bread itself. However, it doesn't taste like any attempt was made to balance these sandwiches. The Mortazza was far too rich, it had nothing to cut through the richness. I mean it's mortadella, strachiatella, olive oil and pistacho crema. Where is the acid on this thing, it is pure richness. The ingredients are amazing quality, you cannot finish this sandwich in a pleasant manner. I suppose adding calabrian chilis can help, but that's an additional option, the sandwich should be good on it's own. The Circolo was relatively unremarkable, I tried this one with the chilis and the chilis overpowered everything, the aioli hardly stood out, it was a basic turkey sandwich, nothing exceptional about it. Most recently I tried the Chicken Parm, and this abomination is what really made me decide, enough is enough, I need to voice this concern for the good of the community of people that could possibly eat at this place. I imagine if a person from italy took a bite of this sandwich they would throw it into the garbage. ADDITIONALLY, if a person from New York or any Italian-American dominant area took a bite of this sandwich they would also throw it in the garbage. First of all, a simple chicken cutlet is supposed to be beaten thin and breaded and lightly fried. The chicken cutlet in this sandwich did not appear to have been beaten thin at all. It looked like a regular cut of chicken, maybe butterflied, breaded and fried. It had hardly any seasoning, no black pepper, not even enough salt on it. It was also unbelievably dry inside, I mean a few more seconds in the fryer and it would have been stringy. Next thing is the sauce. I cannot believe how bad the sauce is on this Chicken Parm sandwich. It tastes like bad jarred spaghetti sauce. It's not that hard to find canned San Marzano tomatoes and cook them down, or maybe go to the actual good place down the street called A Litteri and buy some of their sauce. The cheese on top, low quality, it reminded me of frozen pizza mozzarella cheese. So this thing was tasteless, and also very little thought went into putting it together because for some reason all the basil leaves were on one half, and not the other. It does need Basil, I wish I added chilis because this thing is bland. Somehow under salted, under seasoned in every single aspect of the ingredients. The bread could literally be flour and water and I would hardly have known the difference because it was smooshed flat on a press of some kind and hardly recognizable from the sourced focaccia. I don't think I will ever consider this place, I've already tried two places that do better sandwiches that aren't even sandwich shops.
