Eggman
4209 Airport Blvd, Austin, TX
Crema's Take
“Eggman is an Austin gem that captures genuine New York bodega energy with legitimately excellent breakfast sandwiches, fresh-squeezed orange juice, and smooth cold brew that keeps both humans and their dogs coming back for more. The owner Mark has clearly created something special in the Mueller area—a place where families linger over crispy hash browns and quality ingredients prepared with obvious care, turning a quick coffee run into a moment of pure joy.”

Whoever thinks Disneyland is the happiest place on earth clearly hasn’t been to Eggman. This place is pure joy wrapped in a breakfast sandwich. Even our dog is obsessed with this place, Mark the owner makes the best pup cups. If you haven’t been yet, fix that immediately. The breakfast sandwiches are next-level — perfectly cooked eggs, insanely flavorful sauces, and bread that somehow manages to be soft, crispy, and sturdy all at once. Every bite tastes intentional. Nothing is an afterthought. The vibe is classic Austin — low-key, cool without trying, and just really good food done right. Fast service, friendly staff, and consistently delicious. Whether you’re grabbing something to start your day or cure whatever the night before did to you, Eggman hits every time. 10/10. No notes. Just go. 🥚🔥
Took a short walk over here after visiting the Thinkery, and my toddler, husband, and I DEVOURED our breakfast sandwiches. They were so good. The fresh orange juice and cold brew were both delicious too. The gentleman handing out orders was incredibly kind and had such a good vibe, which made the stop even better. We will definitely be back!
So one of the things that annoys me is when a business outside of NYC claims NYC and it isn't even close. Eggman is the real deal!! If I closed my eyes I would have thought I was back in Jamaica Queens. That said food is 5 stars. Service, you don't go to the spot and not have some conversation, and if you're real NYC you know what the spot is. Dude behind the counter starts talking football with me, yes Pats/Texans playoff game is today and I am all decked out in my Pats gear (the most unNY thing about me is my love of all sports New England/Boston). Cool conversation with a Texans fan. Atmosphere is nice, Texas always has beautiful weather so we ate outside and enjoyed the weather and some conversation. Coffee was also very spot on NY style. If ya know ya know. NY APPROVED 🚕🚖🚕🚖🚕
Rating: 3.3/5 This food truck isn't as good as their other location. We ordered the Bodega Classic ($8.99) online, and it was ready in about 5-6 minutes. I asked for no cheese, medium (spicy & sweet) sauce, and added avocado spread ($2.29). We ate the sandwich right away while it was still warm. Unfortunately, it tasted pretty plain as if there wasn't much sauce. The roll was soft, and the bacon was crispy but quite salty. I'd recommend adding cheese to all sandwiches for better flavor balance.
So excited to have a quality breakfast spot in the mueller area. Eggman always delivers with great food you can tell was made fresh with quality ingredients, crispy hash browns and bacon, eggs cooked to perfection, soft Kaiser rolls, and great service. Not to mention the made in-house HOT sauce that complements their sandwiches perfectly. Please support these guys because I NEED them here! If you’re looking for the perfect egg sandwich, hit up the egg man. You wont be disappointed.
