Russell's Bakery
3339 Hancock Dr, Austin, TX
Crema's Take
“Russell's Bakery is a charming neighborhood spot that's better known for its cakes and custom orders than its day-to-day pastry case—locals rave about their moist, perfectly-balanced carrot cakes for celebrations, though morning croissants can be hit-or-miss on freshness. The real draw is the delightful, quirky atmosphere complete with small dinosaur decorations, excellent service, and a welcoming vibe that feels more like a beloved coffee shop than a traditional bakery, making it ideal for weekend brunches and lingering over coffee with friends.”

I got the cinnamon almond croissant. It was as hard as biscotti. Like something that has been sitting on the counter for ten days. My date got the Danish it was ok but definitely not fresh. Very disappointing
I got a carrot cake for my husband's birthday last week. It was so moist and delicious, just the right balance of sweetness. I have gotten multiple cakes there for family and coworkers over the years, and they are always perfect.
I got the bee’s knees and lemon tart. Both were decent, the service was great and the space was absolutely a delight. There are small dinosaurs around and the staff told me there is more seating with more dinosaurs next door! It was amazing people watching while my toddler played. There were friends catching up, a couple on a date, a study group and a family. Truly perfectly place to chill.
It feels more like a coffee shop than a true bakery. I visited on a Saturday morning – the prime time when pastries should be fresh - and specifically asked for something baked that day. I ordered a plain croissant, but it was clear it wasn’t fresh. They offered to warm it up, just like they would at Starbucks or other lower-tier coffee shops that serve pre-made pastries rather than baking their own. For a place that calls itself a bakery, this was disappointing. The croissant had the texture of bread, not the airy, buttery layers you expect from a proper croissant. Based on that experience, I wouldn’t consider this a bakery in the true sense. As a coffee shop, though, it holds up better. My cortado was reasonably good, and the overall atmosphere inside was pleasant – relaxed, welcoming, and comfortable. The staff were friendly and attentive, which helped balance the experience. There’s also a small bar inside, suggesting they serve beer and possibly other drinks in the evenings. While I wouldn’t recommend it for pastries, it’s still a decent neighborhood spot for a casual coffee break.
My family and I had a great experience at Russell's on Hancock. We went around 11:30 am on a Saturday for brunch. We were able to find a park, although the lot is small. Everything from the bakery looked fantastic, but my girlfriend and I settled on splitting a cinnamon roll and a BLT. Both were a 10/10. We also ordered a cold brew and an iced vanilla latte. This place was excellent, and I've already been back again since my first visit. I would definitely recommend it. The staff there are also very friendly.
